The One with Emeril’s Strawberry Lemonade

Well, its officially Summer time. What would be better then fresh homemade strawberry lemonade?! Emeril’s fresh homemade strawberry lemonade. Today, I will share this recipe with you that is going to CHANGE. YOUR. LIFE.

Today, THIS is what we will be making!

Here are the things you will need.

  • 2 cups water
  • 1 cup sugar
  • 1 tablespoon grated lemon peel
  • 1 cup fresh lemon juice
  • 1 pint fresh strawberries, hulled and halved
  • 2 cups cold sparkling water or club soda [optional, but highly recommended]
  • Ice
  • Mint sprigs, garnish
  • Whole strawberries, garnish

[I forgot to put the pitcher in the group shot. Wah wah.]

First thing first. Pretty pictures of strawberries, AND lemons. You’re welcome.

First, you need to make simple syrup. Melt 1 c sugar in 2 c water, bring to boil, and let cool. You don’t want warm lemonade.

Dice the pint of strawberries in half after they’re hulled. (I didn’t hull them. I just chopped off the tops… I thought ‘hulled’ sounded fancy thats why I said it.)

Place the strawberries in the blender, add splash of water, and puree. Feel free to do a little dance – as the strawberries are dancing in the blender as well!

Half roughly 8-10 lemons [Depending on size].

Juice, Juice, Juice! 1 cup is all you need! Here are a couple tips I have learned for Juicing lemons.

Roll: Everyone knows this one, roll the lemons on a countertop applying some gentle pressure! This causes the juice bubbles to burst making the juicing process much easier.

Microwave: [This is my favorite one] Microwave the lemon on high for 20-30 seconds. Once lemon has cooled it is ready for juicing. Just like rolling the lemons microwaving them also causes the juice bubbles to burst making the juicing process much easier.

Strain the lemonade… unless you like the pulp, which is gross. But remember the strawberry puree is going to make the lemonade pretty thick. You don’t want to feel like your drinking a chocolate shake from In-n-Out. Those straws are not thick enough for those shakes.

In your pitcher pour 1-2 cups sparkling water (or club soda), 2 c chilled simple syrup, 1 c fresh lemon juice, and the strawberry puree.
